Banana Pancakes

My daughter for some unknown reason, thinks that she gets the option to dictate what we’re having for breakfast. Most of the time she chooses pancakes. This is a great use of banana’s that are overly ripe. You can’t have banana bread all the time right? They have a distinct banana flavor throughout, but make sure you use a REALLY ripe banana. You know the ones that look so brown and nasty…

Serves 4 (two pancakes per serving)

1 1/2 cups of flour
3 tbl spoons sugar
1 tbl spoon baking powder
1/2 tsp salt
1 1/4 cup milk
1 stick of butter
2 eggs
slash of vanilla
1/2 tsp cinnamon
1 ripe banana

Heat a non-stick skillet over med heat, and melt 1/2 stick of butter
Mix all ingredients by hand (not literally with your hand, but with a wisk) in a mixing bowl until just combined.
Ladle 1/4 cupfuls onto a hot buttered skillet until bubbly.
Flip and cook till golden on the bottom
