Our Blueberry Muffins

These wonderful muffins are perfectly sweetened, but not overly sweet.

Serves 8

1 1/2 cups all-purpose flour

3/4 cup white sugar

1/2 tsp salt

2 tsp baking powder

1/3 vegetable oil (sometimes i substitute 1/3 cup apple sauce instead)

1 egg

1/3 cup milk

1 cup fresh blueberries

1 1/2 tsp orange zest

For the crumb topping

1/2 cup white sugar

1/3 cup all-purpose flour

1/4 cup butter cubed

1 1/2 tsp ground cinnamon

Preheat the oven to 400 degrees

Grease or line muffin pans (if using apple sauce in recipe instead of oil spray the muffin liners as well)

Combine 1 1/2 cups of flour, 3/4 cup of sugar, salt, and baking powder

Add the oil, egg, and milk to the mixture, and mix well

Fold in the orange zest and blueberries

Fill the muffin cups to the top and cover with the crumb topping

Crumb topping

Mix 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 tsp cinnamon

mix with fork

Bake for 20-25 minutes in a preheated oven
