Sour Cream Banana Bread

It is a cloudy dreary day, and the kids are snoozing. That just screams bake! Not only is this recipe easy with little preparation, but the sour cream makes it moist and delectable. Your house will smell heavenly. When it’s rainy and cloudy outside all i want to do is light candles, bake, pour myself some coffee, and relish in the atmosphere of my surroundings.

Makes 1 loaf

1/2 cup butter; softened
1 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 large mashed banana
1/2 cup chopped nuts (omit if you don’t like nuts)
1/2 cup sour cream

Grease 1 large loaf pan.
Cream butter, sugar, eggs and vanilla.
Add dry ingredients, then bananas, nuts and sour cream.
Mix well.
Bake at 350 F for 1 hour.
