Sweet and Spicy Chicken

This dish has a delicious ginger, spicy, soy sauce.  I make the sauce as directed omitting the hot sauce.  I plate the food for my kids, then add the hot sauce for me and my husband.  This is a quick dish to make, and it uses items you most likely will already have on hand.

Serves 4

2 tbl spoons brown sugar

4 tbl spoons black strap molasses (or honey)

1/2 cup soy sauce

2 tsp grated fresh ginger root

2 tsp minced garlic

2 tbl spoons sriracha, ( it’s a Chinnese hot sauce) or Franks hot sauce

salt and pepper to taste

4 skinless boneless chicken breast halves- cut into one inch strips

1 medium onion cut in 8 wedges

1 carrot sliced a 1/4 inch thick

1 green bell pepper- cut into 1/2 inch strips

2 tbl spoon grapeseed oil

Mix together the brown sugar, molasses, soy sauce, ginger, garlic and hot sauce in a small bowl

Lightly salt and pepper the chicken strips

Heat 1tbl spoon oil in a wok to med/high heat

Add the onion, carrot, bell pepper, and a dash of salt and pepper to season

when crisp tender remove from wok and set aside

Add the remaining oil to the wok.  Add chicken and brown on all sides, about 4 min.  Pour the sauce over the chicken, and add the veggies back into the wok .  Simmer uncovered until the sauce thickens, 8-10 minutes.

This is wonderful served with rice as it soaks up the extra sauce
