Creamy Poppyseed Chickenon Nov 04 in chicken, Main dish by nogle
MMMMM……this is such a great make ahead dish. Sometimes i make it ahead of time, like when the kids are napping than just pop it in the oven at dinner. This is also a great meal if you’re taking someone dinner. We are in love with caramelized onions in this household so I use them in here, but if you’re not a fan, leave them out. I have a bit of an issue serving my family a bunch of canned creamed condensed soup. Call me crazy….so I use canned organic cream of mushroom soup in this. It is a bit more runny than the regular kind, but I like this better anyway as we like this best served over rice.
2 cups cooked chicken, diced or shredded (I use a rotisserie chicken, but you can poach 1 lb of chicken if you like)
1 sleeve Ritz crackers; crushed
1 tablespoon poppy seed
2 (10 1/2 ounce) can cream of mushroom soup
1 (16 ounce) carton sour cream
1 onion; halved, thinly sliced
1 stick butter, melted
In a saute pan over medium heat melt 1 tablespoon butter; caramelize onion in for 15 minutes or till browned.
Combine chicken, onions, soup and sour cream in a bowl
In another bowl add crushed crackers to melted butter; Mix
Pour chicken mixture in the bottom of a casserole dish
Spread cracker mixture over the chicken; sprinkle poppy seeds on top
Bake at 350 degrees for 30 minutes
