Meat Lasagna

One of the ultimate comfort foods for my family. Of course it has to be meat rather than veggie, right? Otherwise, what would be comfort about it? I like to use ground meat loaf mix (veal, beef, and pork. You can find this at the meat counter) along with Italian chicken sausage links. Depending on what i have on hand though i may use ground turkey or throw in some hot sausage to spice it up a bit. And yes, i do use a jar of spaghetti sauce, but don’t judge. I doctor it up……I don’t just open the jar and pour it over the noodles. Also, i like to use cottage cheese rather than ricotta. For one, it’s a tad less thick, and two, it’s cheaper. So why not!

Serves 8

1 lb Italian chicken sausage links
1 lb ground meatloaf mix
2 tablespoons garlic
2 tablespoons balsamic vinegar
1 teaspoon salt
1 1/2 teaspoons basil
1/2 teaspoon fennel seed
1 1/2 teaspoon oregano
1 1/2 teaspoon thyme
pepper
1 (16 ounce) can diced tomatoes
1 jar spaghetti sauce. (I like Newman’s Own)
12 lasagna noodles
1 (16 ounce) container cottage cheese
2 tablespoons parsley
1 egg
3/4 lb Italian cheese blend; shredded
3/4 cup parmesan cheese

Over medium heat sauté garlic, add Italian sausage; cook till browned on all sides. Remove from pan and slice in chunks
add meatloaf mix to the pan, cook until meat is browned; return sausage links to pan
Add next 9 ingredients through spaghetti sauce
Cook until thick and bubbling; cover and simmer for while assembling the rest (at least 30 min)
Boil the noodles and drain
Mix together cottage cheese, egg, 2 tablespoons of parsley (if this mixture is too thick add a little milk).
Layer sauce, 1/2 noodles, 1/2 of cottage cheese mixture, 1/2 mozzarella, sauce, 1/2 cup parmesan cheese, noodles, cottage cheese
mixture, mozzarella, sauce, and rest of parmesan cheese.
Bake at 375° for 25 minutes covered with foil, 25 minutes uncovered.
Let set for about 10-15 minutes before cutting.
