Peachy Chicken

Some friends gave us some amazing peaches that they went and picked from a Peach Farm. After making everything peach that i could think of i had to get creative. I found a recipe for chicken with peaches, and with some changes made it my own. This is a dish that the kids will eat and you’re honey will thank you for. It has a bit of an Asian flare due to the ginger used which my family loves. I think my kids could live on Thai food and spring rolls, but that’s beside the point. I serve this dish over steamed jasmine rice

Serves 4

2 tbl spoons butter
4 peaches, pitted, and thickly sliced or halved
1/2 lemon, juiced
1 1/2 tbl spoons grapeseed oil
4 pieces boneless, skinless chicken thighs
2 pieces boneless, skinless chicken breast
salt and fresh ground pepper
1 onion, chopped
1 (2inch) piece ginger grated
3/4 cup chicken stock
2/3 cup peach preserves
2 tbl hot sauce (i used franks)
2 tbl spoons worcestershire sauce

Heat a medium skillet with the butter over medium heat.
Add the peaches and juice of the lemon, and cook until tender and lightly golden, 10 minutes. Turn off heat

Heat 1 tablespoon of grapeseed oil, in a large skillet over medium high heat.
Cut the chicken breasts in half across the center of each breast to make 4 equal portions
Add the chicken breasts and thighs to the pan and season with salt and pepper, to taste
Cook until the chicken is cooked through, about 12 minutes
Remove to a plate and cover with foil

Drizzle pan with the remaining oil; add the chopped onion, and the ginger, and cook for 1 to 2 minutes
Stir in the stock, the preserves, hot sauce, worcestershire sauce and season with salt and pepper, to taste
Cook over medium heat for a few minutes to let the sauce thicken
Arrange the chicken and peaches on a platter and cover in the peach sauce.
