Harvest Slaw

I had some extra chipotle peppers in adobo sauce left over from some Fish Tacos i had made the night before. I hate to waste anything so it was good excuse to try something new. It’s on the verge of being Fall out, but in my mind I’m already there. I wanted to do a slaw with a little heat rather than the sweet or vinegar flavor.

Serves 6-8

1 small head savoy cabbage; shredded
1/4 head red cabbage; shredded
3 carrots; shredded
2 gala apples; thinly sliced
1 cup pecans; toasted and chopped
1/4 sweet onion; thinly sliced


1 tablespoon dijon mustard
1 teaspoon sugar
1 teaspoon chipotle in adobo sauce (you can sub ground chipotle)
3/4 cup mayonnaise
1 lemon; juiced
Salt and freshly ground pepper to taste

Combine cabbage, carrots, apples, onion, and pecans in a large bowl. Mix well and set aside
In a small bowl, stir together mustard, sugar, mayonnaise, chipotle sauce, and lemon juice until well blended
Season with salt and pepper
Pour dressing overt the cabbage mixture and toss to coat
