Orzo Salad

A dish that screams freshness and summer. You get your bursts of flavor from the goat cheese and dill. However, if you’re not a fan of goat cheese than try feta. This goes great with lamb gyros. If you want to turn it into a main dish you can add some chunks of blackened salmon or chicken.

Serves 6 (as a side)

1 medium zucchini; diced
1 medium squash; diced
1 shallot; minced
8 ounces orzo pasta
2 tsp parsley; minced
3tsp dill; minced
zest of a lemon
2 ounces of goat cheese (or 4 ounces feta)
olive oil
salt and freshly ground pepper

Saute zucchini, yellow squash and scallions in olive oil until tender
cook orzo as indicated on package; toss with vegetables
add parsley, dill, zest of lemon, goat cheese, salt and pepper.
