Not your usual tuna sandwich

I say “not your usual” because well, it’s not….  This has texture from the pecans and sweetness from the cranberries.  My husband, Joshua Tree,  and no, he’s not a tree, but he is a Joshua.  That name stuck when my mom named him that after the tiny band U2.  Tiny…. Whatever!  Are you even paying attention reader?  U2 is anything but a tiny band.  How studly is Bono?!  Whether he’s your type or not you must admit he’s freakin cool. Ok, back to the recipe…  in the winter I slap on a slice of Gruyere or Havarti, wrap it in foil, and bake it at 375 for 20-25 minutes.  Now those are good eats Alton Brown!

Serves 3

3 (5oz) cans tuna packed in water; drained

6 slices good sandwich bread

Heaping 1/4 cup mayonnaise

3 tbl sweet relish

1/2 tsp capers

1/3 cup dried cranberries

2 tbl spoons chopped pecan peices

Mix all ingredients in a bowl

Spread the mixture evenly between 3 bread slices; and top with the other 3 bread slices
