Creamy Cucumbers

My husband claims he doesn’t like cucumbers, but he eats these. It’s a great summer side dish with bbq, or a nice winter side with lasagna. My point… you can serve this cool, refreshing, creamy side anytime. I let it sit and chill in the refrigerator for an hour or so before serving. If i am feeding to company or kids i usually leave out the onions. You don’t want your company to have to put up with your onion breath. Unless of course, you’re hoping they don’t come back.

Serves 4 (side dish servings)

1/2 cup sour cream or plain yogurt
1 tbl spoon vinegar
1 1/2 tsp sugar
1/4 tsp dried dillweed
1/4 tsp salt
fresh ground pepper
1 large cucumber, halved lengthwise and thinly sliced (use a mandolin for equal slicing. Just watch the fingers) ; about 3 cups
1/2 small onion, minced

In a bowl stir together the sour cream, vinegar, sugar, dillweed, salt, and a dash of pepper
Add cucumber and onion, toss to coat
Cover and chill for 1 to 24 hours, stir before serving
