Frizzled Cabbage

This dish is hands down my family’s  favorite cabbage side dish.  My kids slam this down.  The cooking method used brings out a sweetness in the cabbage that you otherwise wouldn’t know exists.  Be sure and remember that it cooks down quite a bit, so you may want to double the recipe.  If i happen to have any of this wicked awesome cabbage leftover, ( i usually don’t) I’ll save it and add it to a stir fry or fried rice. Once you’ve tried it this way you can change it up by adding curry, caraway seeds, or hot pepper sauce.  Ohh…. I just had a thought that this cabbage mixed with hot pepper sauce would be smashing on a hot dog.  If you like cabbage this is killer and it won’t disappoint.

Serves 4

1/2 large green cabbage

2 tbl spoons butter (or more if you’re Paula Dean)

1 tbl spoon garlic salt

salt and pepper

Core and very thinly slice the cabbage

Melt butter and garlic salt over medium in a large non stick pan.

When bubbling add cabbage

Salt and pepper the cabbage (remember you just added garlic salt so don’t go crazy with the salt)

Stir occasionally and cook until mostly wilted, about 10 minutes

Turn the heat to medium low and let cook, stirring frequently until cabbage is starting to caramelize about 10 minutes.  Being careful not to let it burn

Taste, adjust seasonings to your liking, and enjoy
