Loaded Baked Potato Salad

You can take this to a cookout or a pot luck, and nothing will be left. It tastes great coming right from the oven, at room temperature, or served cold. To me, nothing goes better with a grilled steak or some bbq like a good ol potato side dish.

Serves 6

8 potatoes, cubed (half peeled or half with skin)
2 teaspoons salt
6 slices bacon, crisp cooked; crumbled
1 large onion
2 cups cheddar cheese, shredded
16 ounces sour cream
1/4 teaspoon freshly ground pepper
1 cup Miracle Whip

Cube and boil potatoes with salt till tender; drain
while potatoes cook, over medium heat caramelize the onions till brown and limp; about 15 minutes
Combine sour cream, pepper and Miracle Whip.
Add to potatoes.
Add bacon, onions and cheese (reserve some of each for top).
Mix with potatoes.
Pour into baking dish.
Top with reserved cheese, onions, and bacon.
