Sweet and Sour Cabbage

If you like cabbage and vinegar you’ll be sure to like this.  At first it looks as if it will serve 10 people, but it wilts down drastically.  I try and make enough to have left overs.  Then I add it to the Asian Chicken Wraps, or mix it in with a coleslaw.  My mom surprised my husband, who thankfully has an appreciation for this sort of thing, with 4 bottles of 18 year old vinegar.  This stuff is so smooth and rich that you can drink it straight from the bottle.  It comes from Door County Wisconsin, and if you ever go and get your hands on some, buy in bulk.  Any good tasting balsamic will do

Serves 4-6

1/4 cup (1/2 stick) butter

1 2-pound red cabbage, thinly sliced (about 12 cups)

4 Tbsp sugar

2/3 cup balsamic vinegar

Melt the butter in a large pot over medium heat. Add cabbage and saute until slightly wilted, about 5 minutes

Add sugar, toss to coat evenly. Add vinegar. Reduce heat to medium-low; cover, simmer until cabbage is tender, stirring often, about 30 minutes

Season to taste with salt and freshly ground  pepper.
